Beef Teriyaki Stir Fry Everyone Will Love

Yummmm! I love teriyaki sauce and you have options with this meal because the sauce goes with everything. You can make a vegetarian version with a bunch of veggies or swap the beef out for chicken or salmon. I make the classic beef and broccoli with white rice and probably serve it once a month.
Teriyaki Sauce and Beef: The sauce is super easy! Whisk together 1/2 cup soy sauce, 2 tbsp cornstarch, 2 tbsp brown sugar and 1 tbsp minced ginger(optional). You can mix the ingredients together with a spoon but I prefer using a whisk. Thinly slice your flank steak against the grain and marinate in a bowl with the sauce while you cook the rice and broccoli.
Rice: I've been using a rice cooker for the past few years and love it. I use this rice cooker and it's very simple. You add the rice and water and it turns itself to "warm" once done. The rice cooker uses a 1:1 ratio so I normally add 2 cups of rice and add 2 cups of water to have leftovers for the week. Make sure to wash your 2 cups of rice and rinse until the water is clear. I always got confused by rinsing rice because the holes in most strainers are too big to wash rice in them. I've learned to put the rice in the rice cooker bowl and pour water in, letting some fall out until the water is clear. Or just buy a rice strainer.
Broccoli: Heat up 3 tbsp of olive oil in a large pan on medium high heat. Add broccoli and a pinch of salt and cook for about 2-3 minutes until slightly browned. Lower heat to medium and add 1/4 cup of water and cook for 4-5 minutes until tender. Remove from the pan and set aside.
Beef: Heat up another 3 tbsp of olive oil in the same pan on medium heat. Add the slices of steak to the pan leaving most of the sauce in the bowl and fry until browned. Once browned add broccoli and the remaining sauce and stir until sauce thickens and is heated through. Serve the beef teriyaki and broccoli over white rice and garnish with sliced scallions and sesame seeds.

-1/2 cup soy sauce
-2 tbsp cornstarch

-1 tbsp peeled and minced ginger
-1 1/2 thinly sliced flank steak
-8 oz broccoli
-pinch of salt
-2 cups white rice
-thinly sliced scallions
-sesame seeds
